For the last few years our women's church group has done a garden party in August. Everyone makes or brings yummy things from their garden and we feast upon our harvest. This year we had a few garden demonstrations including one about what you can do with all your zucchini. A few of us brought things made out of zucchini. I found this recipe for Chocolate Zucchini cake and added this chocolate frosting.
It was way good. One of those things that you make and your not really sure how it is going to turn out but then you try it and are surprised by its deliciousness. You know what I am talking about. You can't even taste the zucchini at all or see it but it makes the cupcakes so moist. If you choose to do cupcakes, adjust the bake time accordingly. I found that 12-15 minutes was good. I have made this recipe a few times now and next time I will make 1 1/2 times the amount of frosting so that there is enough to give a big ol' frosted top. So if you need to use up some of your zucchini, try this recipe out.
